Perfect Piña Colada
A tropical blend of coconut cream, white rum and tangy pineapple – what’s not to love?
Ingredients: (Makes one glass) Â Â Â Â
- 120ml pineapple juice
- 60ml white rum
- 60ml coconut cream
- A wedge of pineapple, to garnish (optional)
- Handful of ice
Method:
Mix all the ingredients with a handful of ice in a blender until smooth. Pour into a tall glass and garnish.
Magic Mojito
With its refreshing flavor and zingy citrus kick, this timeless cocktail gets our vote every time!
Ingredients: (Makes one glass)
- 1½ limes, cut into wedges
- 20 fresh mint leaves
- 2½ tsp. granulated sugar
- 65ml white rum
- Splash of soda water, to taste
- Fresh mint sprig, to garnish
- Handful of ice
Method:Â
Place the limes, mint and sugar into a sturdy glass and mash with the end of a rolling pin to release the lime juice. Next, add the ice and pour over the rum. Add a little soda water to taste, stir well and serve with a mint sprig.
Chic Peach Bellini
Light and refreshing with sweet notes, this mouth-watering tipple is a Summer staple.Â
Ingredients: (Serves two)
- 50ml of peach nectar
- 1 tsp. fresh lemon juice
- 30ml peach schnapps
- 85ml of chilled Champagne
- 1/2 cup crushed ice
Method:
Mix the peach nectar, lemon juice and schnapps in a chilled glass. Add half a cup of crushed ice, stir, and add the champagne.
Cool Cranberry & Orange Refresher
If you’re often the designated driver, fear not- this delectable drink makes for a marvellous mocktail.
Ingredients: (Serves four)
- 1litre cranberry juice chilled
- 3/4 cup lemon juice
- 1/3 cup sugar
- 1/2 oz orange soda chilled
Method:
In a pitcher, combine cranberry juice, lemon juice, and sugar. Stir until the sugar dissolves. Before serving, top with orange soda and serve over ice.
